Super Easy Mini Salad

2 cucumbers dicedmini salad prep

2 pints cherry tomatoes, halved

1/4 cup chopped red onion

1 can garbanzo beans, rinsed

1/4 avocado diced

handful of parsley chopped

Option protein boost: 1/2 cooked chicken breast

mix all ingredients and divide evenly into 4 containers

before eating add a light dressing: my go to is a splash of grapeseed oil and the juice of 1/2 a lemon
